so, after weeks of asian eating, when the opportunity arose where i could do some cooking, i jumped on the opportunity. this pasta dish was made with just a few ingredients and about 30 minutes. totally delicious and super easy. 

here is the recipe to my best approximation - i never measure. work with what you like and what you've got, substitutions and modifications are welcome.

1 box cherry/grape tomatoes (about 15-20), washed and quartered
1 small bag of spinach, washed
1/2 red onion, chopped
1/4 red onion, thinly sliced
3 cloves garlic, chopped
about 3 tbsps butter (more or less as desired)
salt & pepper to taste
1/2 box angel hair/ thin spagetti pasta
parmesan cheese

soak and wash all vegetables well, the chop (once you finish prep, your practically done!)
in a skillet, over medium-high heat, melt butter then add garlic. give the garlic a minute or two to cook then add the chopped onion. once the onions start to become translucent, add the tomato and keep cooking until the tomatoes break down and all flavors combine well (about 10 minutes or so...)
turn on the pasta water and bring to a boil. (finer pastas cook much faster than regular spaghetti, so add more or less time depending on what type of pasta your using.)
when the pasta is just about done, throw the spinach in with the tomato and let it wilt. toss the pasta and tomato & spinach mixture together and then top with a little cheese and... YUM.

this ball of deliciousness was our desert, a gift from francis who is just starting up her own baking company. francis calls them "cakeballs," i call them amazing.

Looks super fresh and delicious! Angel hair pasta is my favorite. I love it with a tiny bit of truffle oil & butter with roughly chopped basil and some sea salt on top!
